Grown on Cambrian soil in Colbinabbin region , the grapes are handpicked in March . Vinified separately, Nebbiolo is fully destemmed with fermentation and maceration on skins for 15 days, pressed and matured in tank . Syrah is 50% wholebunch, fermentation and maceration on skins for 16 days, pressed and matured in barrel before blending . Bottling unfiltered with a small addition of sulfur in September 2023 . Light and fruity with enough savoury touch to pair with food .
