Winter is the season of maturation, and occasionally the end of the fermentation . This year most wines are finished and are now developing secondary aromas as well as clarifying naturally .The Pet Nat is maturing in bottle, the rose in tank as well as much of the Bespoke reds, whilst the LAPALUS reds and chardonnay are slowly evolving in french oak barrel. This year we have a few new white wines potentially going to the LAPALUS label, decision in spring . Before this , we will bottle 2018 reds as well the 2018 LAPALUS chardonnay, soon to be released .Please visit the store or sign up to our wine club below .
