maisonLAPALUS nebbiolo 2017 : early May, nebbiolo from the cool region of Yandoit, from the Fyffe family,  is ready to be picked. The volcanic and clay loam soils offer good drainage with the gentle slop after the late april rain . All destemmed, the natural fermentation is conducted over 5 weeks with light plunging , in stainless steel open fermenter. After pressing the wine is matured in oak( 4-5 years old french oak barrels)  , on lees for 12 months . A small amount of sulfur is added prior to bottling with no filtration . 12.7% alc./vol.
